Best sugar substitute to cook with

After my competition i'm going to start baking high protein, gluten free desserts/sweets that are low glycemic and healthy. I'm not gluten free by choice, I have a severe sensitivity to gluten and cannot eat it. I have coconut nectar which I was planning to use instead of syrup, honey, agave. Was planning to use truvia for baking with as I hear it is the best tasting replacement and very low glycemic. Also have seen a lot of people bake with xylitol.
 
Mastermolnar switch to coconut nectar, very high in MCT's and even lower glycemic than agave. Look it up and tastes damn good.
 
I would say honey of the recipe works with it. I know it had a distinct flavor though.

Careful with the stevias guys. Some brands use dextrose as a primary ingredient. In the raw is one of them. Could be the only one I'm not sure lol [emoji38]

Jack is right... i dont even touch them when they use dextrose or erythritol... i ONLY use sweet leaf
 
When I use to work at the health food store, our raw chef used coconut palm sugar on his desserts and they tasted so good. It has a lower glycemic index

If you want sweet with low glycemic then that leaves out honey, maple syrups, or any sugar whether it be from coconut, or brown sugar etc. Your best bet would be the sugar alcohols, like sorbitol, xylitol and mannitol. These do have calories but are good on the GI index.

If you want calorie free or on a keto diet you would have to use sucralose. Not the stuff on the market called splenda, but from bulksupplements.com, buy sucralose. It is two molecules of sugar with the hydrogen atom replaced with chloride ions. Kind of like fusing sugar and salt together. It is so powerfull that to sweeten your coffee you use the amount that fits on the head of a flat toothpick.
If I amdoing low carb my preference is to just not sweeten anything. I drink lots of brewed tea and enjoy it with a twist of lime.
