On the whole deficit thing... Everyone is different based on the function of thier metabolism. So two people will be the exact same.

Those calculators are nothing special no real true acuracy. Takes a lot of trial and error to find what works.

That is definitely the truth. When it comes down to it, you have to learn your own body, and what does and doesn't work for it. We are all very different

Let's put it this way... in the am I take in 4 lean ground beef paties. Lunch and diner I take down at the very least 1lb of steak.

Red meat is a great protein source for many many reasons. I say keep it.

should /try/ tofu. it's leaner and a more complete protein than chicken (though not as a good protein as eggs or beef! it's all about variety). a body builder friend of mine turned me on to it. here's a recipe I posted a while back that's a good way to fill a french fry craving without guilt:

How do you get nitrate free celery? You mean aside from the natural celery nitrates?

I actually was talking about the cold cuts. I was just saying if you can get them at the deli counter instead of by the cheese and yogurt they'll be fresher. I don't think it really matters though.

i would definitely get your protein up a bit.. higher protein diets, as long as its not excessive, then to allow for more weight loss... with your chicken, make sure it is more lean than the kind you are taking in now.. look at lean chicken tenders or hand trimmed breasts etc... KEEP IT LEAN... i would not have steak in your diet at this point considering where youare at physically... i would keep it to these types of meats, poultry and fish... white fish like cod, halibut, pollock, tilapia... lean chicken as mentioned above and for meats, look at veal medallions or center cut beef tenderloin... if you have ground beef, keep it at the 97/3 range when you buy it... the crackers definitely need to go... you can have some grapes but add them to fat free plain greek yogurt... add in some oat and wheat bran to your diet as well... protein bars are few and far between when finding quality but ansi cheesecake bars would be perfect for you as well as gnc total lean advanced protein bars... look at adding an apple in there as well or grapefruit... your lacking fiber as well and that's extremely important...
 
Everybody gets a laugh when you talk about vince gironda and his eggs and beef diet..but I will tell you this...I did it for 3 months and that was the most ripped I ever was in my entire life. I was in my early 40's and Vince said that his diet was THE BEST for rapidity and deep cuts. He was right, but it took me a long time to ever eat beef again...and eggs for that matter. Most of the old school Olympias made beef a staple in their diets, so right now you have a purpose and a need to have meat. Think of it as a cycle! For me it was a 12 week cycle of just beef and eggs. The biggest problem was that the low BF, around 4.5%, was not keepable. I lost it about 2 weeks after eating normal food. I still do a 3 day tuna and water diet every so often, and still prefer my energy from fats rather than carbs. My carb intake is about 110 grams, mostly whole oats and quinoa, in a 2200 calorie diet
